From The Courthouse Kitchen: Baked Apple with Crumb Topping

These baked apples refrigerate well and reheat quickly in the microwave. Baking them until slightly tender will keep them from getting too soft when ready to eat. Of course, bake them to your preference.

Baked Apple Ingredients | |||||
3 | each | Apple, Halved and Pitted | 6 | tbsp | Vanilla Whey Protein Powder |
¾ | cup | Old Fashioned Oats | 3 | tbsp | Raw Walnut Pieces |
1 | tbsp | Ground Cinnamon | 6 | tsp | Coconut Oil |
Baked Apple Instructions | |||||
1) | Preheat oven to 375 °. | 5) | Press ½ tbsp of walnuts into the oat mixture. Drizzle each half with 1 tsp. coconut oil. | ||
2) | Coat a baking dish (big enough to fit apples evenly) with nonstick spray. Lay apple halves cut side up in dish. | 6) | Bake for about 20 minutes or until apples are slightly tender and filling in golden brown. | ||
3) | In a small bowl mix well oats, protein powder and cinnamon. | 7) | Allow to cool completely and wrap in plastic wrap. | ||
4) | Divide oat mixture evenly into the center of the apple halves. |
